ST. SERRA'S FIZZ
1 Egg White
1.5 oz High West Bourbon
1 oz Manzanilla Sherry
0.5 oz Smoked Tea Syrup
0.5 oz Fresh Squeezed Lemon Juice
1 Tablespoon Fig Jam
2 dashes Angostura Bitters
Fig Garnish
Add all ingredients except club soda into a cocktail shaker with cube ice and shake until chilled. Strain back into the cocktail shaker and shake again with no ice (reverse dry shake). Double strain into a chilled Old Fashioned glass. Top with chilled club soda and garnish with a fig.
