0.25 oz Maraschino Liqueur
1.5 oz Fresh Grapefruit Juice
0.5 oz Fresh Lime Juice
1 oz Simple Syrup
4-5 Mint Leaves
2 Pineapple Chunks
0.75 oz Champagne or Cava
Long Lemon Twist Garnish
Muddle mint and pineapple in a cocktail shaker. Add all ingredients except sparkling wine to shaker with ice and shake until chilled. Double strain into a chilled martini glass and top with sparkling wine, Garnish with a long lemon twist.
